Swiss Chard Wraps
Makes: 4 servings
Serving Size: 1 wrap
Ingredients:
4 large Swiss chard leaves or 1 cup spinach leaves, washed and chopped
1 avocado, peeled and chapped
1 teaspoon lemon or lime juice
1/4 chili pepper, washed and chopped
salt and black pepper to taste
1 tomato, washed and chopped
1/2 onion, chopped
1 carrot, washed and grated
4 whole grain tortillas
Directions:
1. In a large bowl, mix avocado, lemon or lime juice and spices
2. Add Swiss chard or spinach, tomato, onion, and carrots and mix together.
3. Spoon 1/4 of mixture onto each tortilla and toll up.
If you don’t have tortillas on hand, scoop mixture onto the Swiss chard leaves instead.
